Cream Scone Recipe
2 ½ cups of all-purpose Flour (300 grams)
4 teaspoon of Baking Power
2 Tablespoons of sugar
2 teaspoons of Vanilla
1/3 cup of Butter (70 grams of salted butter)
¾ cups of heavy cream
½ teaspoon of grated zest (orange or lemon or both) for an extra tangy touch!
Line 2 baking sheets with parchment paper.
Set oven to 400 degrees F. or, around 200 degrees C.
In a bowl, mix the flour, sugar, and baking powder together. Then mix in the butter until the mixture resembles a streusel (course large crumbs).
In another bowl, mix together the eggs, cream and raisins and zest.
Then add the egg mixture to the flour mixture and mix just until blended. You do not want to over-mix, as the scones will not turn out as tender and flaky.
Once mixed, then take out a handful at a time of the dough and roll in between your two palms to create a smooth ball. You can then place the ball onto a backing sheet and flatten it slightly or cut them into the shape you desire.
Place the soon-to-be-scones at least 2 inches apart on the baking sheet. For a finished touch, brush the top of the scones with cream and sprinkle with sugar, cinnamon or whatever you desire. Bake for between 10 to 15 minutes, or until the scones are golden brown!!!
They taste best warm!
